What Does it Mean for a Restaurant to be Sustainable?

La Jolla Village is home to incredible seafood restaurants ranging from casual to fine dining.  Most are committed to environmentally friendly and sustainable practices. A sustainable restaurant operates with practices that have a minimal impact on the environment while also promoting social responsibility and economic viability.

Specifically, a sustainable restaurant:

  1. Sources ingredients locally and/or sustainably: A sustainable restaurant aims to source ingredients from local farmers, growers and suppliers to reduce the carbon footprint and support the local economy. They also prioritize sustainably sourced seafood and meat.
  2. Minimizes food waste: A sustainable restaurant aims to minimize food waste by using every part of an ingredient, composting food scraps, and/or donating unused food to local food banks or charities.
  3. Reduces energy and water usage: A sustainable restaurant aims to reduce energy and water usage by using energy-efficient appliances, installing low-flow faucets, and using renewable energy sources where possible.
  4. Uses eco-friendly packaging: A sustainable restaurant aims to use eco-friendly packaging made from recycled materials, or biodegradable and compostable materials.
  5. Promotes social responsibility: A sustainable restaurant may partner with local community organizations and/or donate a portion of their profits to support social and environmental causes.

By adopting sustainable practices, restaurants can reduce their environmental impact, contribute to a more sustainable food system, and improve their overall business operations.
